The Kicker Burger


Sunday I was perusing one of my favourite food blogs, What’s Gaby Cooking, when I came across her Cheddar Jalapeño Chicken Burgers with Guacamole recipe. I was going to make it that night. I added the ingredients I needed to my shopping list and headed to my local supermarket to do my weekly shop. Now I’m an ‘off-with-the-fairies’ and ‘over-the-top’ style shopper, which means that I casually float through the isles picking up items on my list and extra’s because I’m a feeder. However, I always seem to forget something and it’s usually something vital like toilet paper or milk, yep, it’s nearly always milk.

Anyway, Gaby’s recipe called for avocados so I picked up a few, went home, unpacked the groceries and went about the rest of my day, not thinking about the recipe again until dinner time.

A few hours later I started preparing the meal. I combined all the chicken ingredients to make the burger patties and went to start on the guacamole when I realised I had made a huge mistake. Being the ‘off-with-the-fairies’ shopper that I am, I had picked unripe avocados. They were all inedible and I almost had a breakdown. I know, I know it’s not that big a deal but you know when you’re tired and run down, even the littlest thing can set you off. I was devastated and ready to call for a pizza, but I took a few deep breaths instead and decided to make burgers but substitute the guacamole with another sauce.

I opened up the cupboard and rifled through jars and bottles of sauces and found the perfect one, Chipotle Sauce. I opened the fridge and Kewpie mayonnaise immediately caught my eye. PERFECT, what a combination. From my finds I decided to create a chipotle mayo sauce to go with my burger. Dilemma diverted.


For the burgers

Gaby’s Cheddar Jalapeño Chicken Burgers (minus the guacamole and salsa)

For the chipotle mayo

1 tbs Garlic (fresh or minced)

1 cup Kewpie Mayonnaise (find at your local Asian supermarket)

1 tsp – 2 tsp Chipotle Hot Sauce, depending on how hot you like it (find at gourmet greengrocers or online at Monterey Mexican Foods)


4 Breadrolls


2 Tomatoes


After you’ve made Gaby’s chicken burger patties, put aside and quickly whip up the mayo.

Combine the garlic, Kewpie mayo and Chipotle sauce in a small bowl and mix to combine.

Spoon onto one half of your burger bun. Top with the chicken burger, lettuce and tomato.

Serve and eat!
