Lipstick & Cake Chats with Candy and Eden from Glazed Doughnuts
Over the last few months I’ve continued to hear about this new doughnut brand taking over Sydney. I’ve been told by everyone to head to Reuben Hills Cafe or Bondi Markets to get my mitts on these crazy-good doughnuts.
California natives Eden Elan and Candy Berger are the brains and bakers behind and brand. The two became friends while working together in a Sydney cafe and spent many a late night reminiscing over the good ol’ American doughnut. Their friendship soon turned into a business partnership when they realised that there wasn’t anywhere in serving up the doughnuts they were used to back home.
Working out of a pizza shop in Bondi (starting at 3am every morning mind you), the girls supply at least 20 Sydney cafe’s with doughnuts.
I see big things on the horizon for these two and wanted to chat to them about how they got their start, their crazy delicious flavours and how many doughnuts they eat per day…
So tell us a little about yourselves and what inspired you to start Glazed Doughnuts?
Glazed started out of us just looking for a good doughnut and not being able to find it. We met just over a year ago working in a café together, Candy was a chef in the kitchen and I (Eden) managing the floor and probably on the second day of working together we knew we were going to start some sort of food business together and the doughnuts just came about in a really natural way deriving from a lot of late night conversations and cravings.
Were you already bakers?
Not at all! Both of us have no experience in baking and are self-taught.
And what makes your doughnuts different from others available?
I think what makes us so different is the fact that everything we make is handcrafted, whether it be the vanilla essence which we make out of fresh vanilla beans and a bottle of vodka to the doughnuts we cut out individually we put a lot of effort into making sure that everything is made by the two of us and that people are getting the freshest product sourced with the best ingredients we can find.
Where can Lipstick & Cake readers get their mitt’s on Glazed Doughnuts?
At the moment we supply to over 20 cafes across Sydney and now also in Cronulla. But some of our cafes that you could be sure to get them in all week-long are Reuben Hills, Kingswood, John Smith and Baker Bros. But its best to check our instagram where we try to update our followers with where the doughnuts can be found on the day.
What flavours are available?
We change our flavours quite often but at the moment the flavours available are:
- Rocky Road – Dark chocolate ganached topped with our home-made rocky road/
- Nutella – Nutella glaze with waffles and banana chips
- Honey & Peanuts – Honey glaze topped with crushed salted peanut butter pretzels
- Strawberry – strawberry glaze topped with pop tart crumble
- Watermelon – fresh watermelon glaze topped with mint and pistachios
- Mango lassi – mango glaze with freeze-dried Greek yoghurt flakes.
- Middle Eastern mess – vanilla glaze topped with halva, pistachios and freeze-dried pomegranates.
And how do you come up with flavours?
A bit of a combination of everything. Before we even started baking we started writing down different ideas that just popped in our heads and we ended up writing down about 80 ideas and it just developed from there, some of the inspiration is seasonal for example the watermelon doughnut and others come from people asking for an ingredient for example nutella. We make a point of only putting flavours that we love on the menu and if its something one of us doesn’t like it isn’t going on!
What is your number one favourite flavour?
I think our favourites change all the time, every time we come up with a new flavour it becomes our favourite. The nutella one is definitely up there though!
What is the best part of your job?
We make doughnuts for a living! I think being able to be so creative is a really fun aspect of the job, we never get bored because we are always chasing the next thing and looking at ways to grow and get better.
And the most challenging?
Waking up at 3 am is challenging to say the least.
How many doughnuts do you eat per week?
Haha lets just say there’s a lot of tasting going on in our kitchen, we don’t want to disclose numbers.
What’s on the horizon for Glazed Doughnuts?
Hopefully Glazed will grow a bit more this year, we’ve had an amazing first few months to the business and now that we’ve figured out what we are doing and how to do it we want to reach further areas in Sydney and be able to provide our doughnuts to as many people as possible. We pretty much want our doughnuts to take over Sydney.
