Coconut Shrimp Tacos

Another delicious recipe using Coconut Shrimp. My Coconut Shrimp Tacos recipe is fresh and full of flavour. Did I mention it’s super easy to make too?

My Coconut Shrimp recipe was such a hit with my family and friends that I have incorporated it into a number of recipes since. Firstly, I made a delicious bowl of Coconut Shrimp Salad and last weekend I tried a new recipe, Coconut Shrimp Tacos.

My favorite kind of taco is one filled with crunchy fried ingredients (naughty, I know) and this is on par with my favourite Crispy Fish Tacos. I let the coconut and pineapple flavours do all the talking, so I just teamed it with cabbage, a squeeze of lime and a sprinkle of coriander.

This is a fresh and flavoursome dish, perfect for lunch or dinner and can be enjoyed any time of the year.

Coconut Shrimp Tacos 2

INGREDIENTS

For the pineapple salsa

1/2 a pineapple

Zest and juice of 1 lime

1 tsp chilli

1/2 tsp chopped garlic

1-2 Tbs coriander (cilantro)

Salt and pepper, to taste

For the tacos

1 serving of my Coconut Shrimp

Tortillas

Cabbage, thinly sliced

Coriander, for garnishing

Lime juice, to taste

METHOD

For the pineapple salsa

  1. Add all the ingredients to a blender and blend until chunky, or smooth – your choice.
  2. Pour into a dish and serve with your coconut shrimp. Make ahead and keep in the fridge until time to serve.

For the tacos

  1. Cook your Coconut Shrimp (following this recipe) and set aside.
  2. Warm tortillas in either the microwave or for a few seconds in a fry pan over low-medium heat.
  3. Add cabbage to the middle of the tortilla, followed by a few of the coconut shrimp, a dollop of pineapple salsa, sprinkle of coriander and a squeeze of lime juice.
  4. Repeat until all ingredients are used up.
