White Chocolate and Raspberry Scones

No passionfruit? No problems! I replaced the passionfruit in my original scone mix to make equally as delicious White Chocolate and Raspberry Scones.

I was recently in the US and had a hankering for my for White Chocolate and Passionfruit Scones, however I couldn’t find passionfruit anywhere! I already had the white choc-chips, cream and lemonade in my trolley and decided to improvise and add another kind of fruit.

Raspberries! White chocolate and raspberries are always a good combination, so I knew I couldn’t get this recipe too wrong.

Just like the White Chocolate and Passionfruit Scones, my White Chocolate and Raspberry Scones are easy and so very, very tasty. They’re the perfect treat to whip up when you know you have guests coming over, or just something sweet to have with your morning and afternoon cuppa.

INGREDIENTS

2 cups self-raising flour, sifted

¼ cup caster sugar

½ tsp salt

1 and 1/2 cups white choc chips

1/2 cup plus a splash of thick cream

½ cup lemonade

1/2 – 1 cup raspberries, frozen or fresh

20ml milk (for brushing on scones)

METHOD

  1. Preheat oven to 210°c / 410° f and line a tray with baking paper.
  2. Place the sifted flour, sugar, salt and white choc chips in a large mixing bowl and mix until combined.
  3. Add the cream, lemonade and raspberries to the mixture and mix gently until it forms a soft dough. Note: don’t over mix – As soon as it looks like a dough then move onto the next step.
  4. If your dough is a little dry, add a splash more of cream and lemonade. If your dough is a little too wet, add more flour.
  5. Turn dough onto a lightly floured workbench and knead lightly until combined. Either roll dough or press out until it’s about 3-4cm thick. Use a scone cutter (or the mouth of a glass) to cut out scones and place onto the prepared tray.
  6. Once all scones have been added to the tray, lightly paste the top of each scone with the milk.
  7. Bake for 8-10 minutes, or until lightly golden. Enjoy!
